Deviled Harvest Potatoes

Short description:

A new twist on the classic deviled egg- baby red potatoes are par-boiled, cut in half and used as a base for these “deviled potatoes”. Topped with a mixture of egg yolk, cream cheese, chopped Ocean Spray® Dried Cranberries, diced apples and chopped pecans, and then sprinkled with fresh chopped chive.

Ingredients:

4 Tbsp. Mayonnaise

2 Tbsp. Dijon Mustard

1 Tbsp. Sherry Vinegar

1 Tbsp. Olive Oil

¼ cup Chopped Ocean Spray® Dried Cranberries

¼ cup Granny Smith Apple, very small dice

2 Tbsp. Chopped Pecans, roasted

12 Hard Boiled Egg Yolks

Directions:

Combine all ingredients in a medium sized bowl and whip to a smooth consistency. Reserve under refrigeration until ready to use.
