Tuna Poke Lettuce Wraps

Short description:

A low carb, gluten free sandwich offering, this build features fresh diced Ahi Tuna tossed in a soy-sesame vinaigrette with chopped scallion, chopped Ocean Spray® Dried Cranberries, fresh avocado and diced watermelon and then placed into individual crisp leaf lettuce cups.

Ingredients:

2 fresh bib lettuce leaves

¼ cup diced ahi tuna

1 tablespoon chopped scallions

2 tablespoons Ocean Spray® Dried Cranberries

1 tablespoon diced avocado

2 tablespoons diced watermelon

2 tablespoons soy-sesame vinaigrette

Directions:

Pick out the best looking lettuce leaf cups and wash and pat dry. In a small bowl toss together the rest of the ingredients until coated with the vinaigrette.

 

Spoon the mixture into the lettuce cups and serve.
