Cannellini Bean and Avocado Wrap

Short description:

Mashed cannellini beans, avocado, cheddar, Italian herbs, chopped Ocean Spray® Dried Cranberries, crisp balsamic slaw.


1/3 cup avocado, cut into large chunks

1/3 cup cannellini beans, drained and rinsed

3 tablespoons olive oil

½ roma tomato, small dice

3 tablespoons cup sharp yellow cheddar, shredded

3 tablespoons Ocean Spray® Dried Cranberries

¼ cup red cabbage, thinly shredded

¼ cup coleslaw mix

2 tablespooons balsamic glaze or reduction

1 tablespoon honey       

½ teaspoon rosemary, fresh, chopped

½ teaspoon thyme, fresh, chopped

1 teaspoon parsley, fresh, chopped

1 wheat wrap, 8-10 inches


In a small bowl, smash the avocado. Add the cannellini beans and continue smashing until almost all of the beans are smashed, but some still remain in larger chunks. Also, add the olive oil while smashing to loosen the mixture into a spreadable paste. Season with salt and pepper.


In another small bowl, add the red cabbage, cole slaw mix, balsamic glaze, honey and fresh herbs. Toss to thoroughly coat the shredded vegetables. Season with salt and pepper.


To build the wrap, first spread the avocado-cannelini mixture down the center of the wrap. Top with the diced tomato, followed by the sharp cheddar cheese, Ocean Spray® Dried Cranberries, and fresh balsamic slaw. Roll tightly to form a wrap and serve immediately.
