Smoked Cranberry BBQ Chicken Sandwich

Short description:

This sweet and savory sandwich features slow smoked and pulled chicken tossed in a delicious Smoky Cranberry BBQ Sauce and topped with a crunchy Carolina style coleslaw and fresh bread and butter pickles on butter toasted brioche. Segment: Traditional Casual, Fast Casual, B&I, Hotels.

Ingredients:

Brioche Bun, halved                                                             1 each

Unsalted Butter, melted                                                        As Needed

Ocean Spray® Cranberry BBQ, 'recipe below'                            ½ cup

Smoked and Pulled Chicken                                                    8oz

Bread and Butter Pickles                                                        3 each

Dressed Cabbage Slaw Mix, 'recipe below'                                 1 cup

Salt and Pepper                                                                    TT

Directions:

  1. Preheat griddle to 350F
  2. Brush each side of the brioche and toast on griddle until golden
  3. Toss chicken in BBQ sauce and then place on bun
  4. Top with the pickles, dressed cabbage slaw mix and the bun top
  5. Serve immediately with your favorite side

    Sweet and Smoky Barbeque                                                      4 cups

    Ocean Spray® Cranberry Jelly Sauce                                         1 cup

    Method of Preparation

    1. In a small bowl mix all ingredients until combined and reserve until ready to use

    Coleslaw Dressing

    Mayonnaise                                                                              1 cup

    Yellow Mustard                                                                        3 T

    Honey                                                                                      2 T

    Pickle Relish                                                                             ¼ cup

    Shredded Cabbage                                                                     5 cups

    Shredded Carrot                                                                        1 cup

    Tart Apple, Julienne                                                                 2 cups

     Method of Preparation

    1. In a small bowl mix all ingredients, except for cabbage, carrot and apple, until combined, and reserve until ready to use
    2. When ready to use, mix cabbage with coleslaw dressing and use immediately
