A crisp shredded romaine, massaged kale and arugula is topped with fresh chilled edamame, scallions, cucumber, Ocean Spray® Dried Cranberries, carrot and roasted red peppers tossed in a delicious sesame vinaigrette. Romaine, chopped                                                                    ½ cup

Kale, chopped                                                                           1 cup

Arugula                                                                                    ½ cup

Edamame                                                                                 1/3 cup

Scallion, sliced                                                                          ¼ cup

Cucumber, Julienne                                                                    1/3 cup

Ocean Spray® Dried Cranberries                                                  1/3 cup

Shredded Carrot                                                                        ¼ cup

Roasted Red Pepper                                                                   ¼ cup

Smoked Salmon                                                                         ½ cup

Sesame Dressing, 'recipe below'                                                    2 fl oz

Cashews, chopped                                                                     2 T

Fried Onion Topping                                                                    1 T


  1. In a large bowl, combine all ingredients except cashews and fried onion topping
  2. Toss until combined and place on a chilled salad plate
  3. Top salad with cashews and fried onion
  4. Serve immediately

 Sesame Vinaigrette

Grilled Scallion                                                                         2 T

Ginger                                                                                    2 T

Roasted Garlic                                                                          2 T

Sriracha                                                                                 ½ tsp

Peanut Oil                                                                                3 T

Sesame Oil                                                                               3 T

Kosher Salt                                                                              1 tsp

Fresh Ground Black Pepper                                                         ½ tsp

 Method of Preparation

  1. In a large bowl, combine all ingredients and whisk until emulsified
  2. Reserve until ready to use
