Grilled Romaine Wedge

Ingredients:

Ocean Spray® Cranberry Marinated Skirt Steak, 'recipe below'     4 oz.

Romaine, chilled, halved, grilled                                               1 head

Buttermilk Garlic Yogurt Dressing                                             4 T

Pretzel Croutons                                                                  ¼ cup

Campari Tomatoes, diced                                                       3 T

Ocean Spray® Dried Cranberries                                             2 T

Pickled Shallot                                                                     2 T

Asiago Cheese, shredded                                                       2 T

Directions:

  1. Place a grilled piece of chilled romaine on a chilled salad plate
  2. Drizzle with the Buttermilk Garlic Yogurt Dressing and then layer the grilled skirt steak over the romaine.
  3. Sprinkle all of the remaining ingredients over the romaine and serve immediately.

 Ocean Spray® Cranberry Marinated Skirt Steak:

Ocean Spray® Cranberry Juice Cocktail                                     1 cup

Olive Oil                                                                               ½ cup

Rosemary, fresh, chopped                                                         1 T

Thyme, fresh, chopped                                                             1 T

Parsley, fresh, chopped                                                                            1 T

Salt, kosher                                                                            ½ T

Garlic, minced                                                                         1 tsp

Black Pepper, ground                                                                ½ tsp

Skirt Steak, trimmed                                                                 5 #

 Method of Preparation

  1. For the marinade, in a large bowl, mix all ingredients except for the skirt steak.
  2. Add skirt steak and toss to coat the steaks evenly.
  3. Marinate for 12-24 hours
  4. When ready to use, grill steak over medium high heat until desired temperature is reached
  5. Slice and chill until ready to use OR slice and use immediately.

 Buttermilk Garlic Yogurt Dressing:

Yogurt                                                                                     ½ cup

Mayonnaise                                                                              ½ cup

Buttermilk                                                                                ½ cup

Chive, chopped                                                                         1 ½ T

Dill, fresh, chopped                                                                   1 T

Garlic, minced                                                                          ½ tsp

Chipotle Powder                                                                       ¼ tsp

Kosher Salt                                                                               ¼ tsp

Fresh Ground Black Pepper                                                          1/8 tsp

 Method of Preparation

  1. In a large bowl, combine all ingredients and whisk until emulsified
  2. Reserve until ready to use
