Ingredients:

Tri-Color Quinoa Blend, cooked                                                5 Qt

Carrot, shaved                                                                      5 cups

Zucchini, shaved                                                                   5 cups

Yellow Squash, shaved                                                           5 cups

Beets, roasted, thinly sliced                                                    5 cups

Ocean Spray® Dried Cranberries                                              3 ¾ cups

Ocean Spray® Italian Cranberry Vinaigrette, on website, search sauce  3 ¾ cups

Kosher Salt                                                                           TT

Fresh Ground Black Pepper                                                       TT

 

Directions:

  1. In a large bowl combine all ingredients with vinaigrette and toss until combined and evenly coated.
  2. Season with salt and pepper to taste.
  3. Serve immediately.
