Grilled salmon with cranberry relish

Short description:




  • 1 cup      Ocean Spray® Cranberry ClassicTM Fruit Drink

  • ¾ cup     Ocean Spray® Craisins® Reduced Sugar Dried Cranberries

  • ¼ cup      Finely chopped onion

  • 1 tsp        Orange zest

  • 1 tsp        Five-spice powder



  • 2 tbsp      Soy sauce (Premium)

  • 2 tbsp      Orange juice

  • 1 tsp        Honey

  • 2 med      Salmon fillets


    1. Combine relish ingredients in saucepan. Cook over medium heat until mixture boils, stirring occasionally. Reduce heat and simmer for 6 to 8 minutes or until onion is tender and mixture thickens. Leave to cool.

    2. Combine soy sauce, orange juice and honey in a bowl, mix well. Add salmon, skin side up. Cover and refrigerate for 30 minutes.

    3. Lightly grease and heat grill/pan or BBQ, place skin side up, and cover. Cook on both sides for 5 minutes over medium heat or until flesh is opaque and flakes easily with fork.

    4. Remove salmon from the heat and place on serving platter. Serve with relish
