Salmon with cranberry superberry vinaigrette

Short description:



  • ½ cup      Ocean Spray® Cran-BlueberryTM Fruit Drink
  • 5 tbsp      Olive oil (keep 1tbsp sep.)

  • 4 tbsp      White wine vinegar

  • 1 tbsp      Honey

  • 1 tsp        Salt

  • 4 med      Salmon fillets

  • 4 cups     Mixed salad

  • ¼ cup     Ocean Spray® Craisins® Original Dried Cranberries

  • ¼ cup         Blueberries


  1. Whisk together Ocean Spray® Cran-Blueberry, olive oil, vinegar, honey, and salt in small bowl, set aside.
  2. Heat remaining tablespoon of olive oil in large non-stick pan over medium-high heat. Season salmon fillets with remaining 1/2 teaspoon salt. Cook for 6 to 8 minutes until golden on both sides and flakes easily with a fork.
  3. Place salmon on greens and drizzle with vinaigrette. Mix salad with Craisins® Dried Cranberries and blueberries.
