Cranberry Linguine Florentine - School Recipe

Ingredients:

6 lbs (12 cups dry, 48 cups cooked)

Whole wheat pasta, uncooked

9 lbs (55 cups) Fresh large button mushrooms, sliced

6 cups Yellow onions, minced

3 cups Canola oil

9 cups Beef broth

3 quarts Half and half

7 lbs, 8 oz (75 cups) Baby spinach

1/4 cup Lemon juice

3 tsp Nutmeg, ground

6 cups Ocean Spray® dried cranberries

Directions:

  1. Place 2 cups canola oil in a large saucepan and heat to medium- high. Add mushrooms and onions. Cook until onions are tender, stirring frequently. Add beef broth. Cook until liquid is reduced by two thirds, stirring frequently. Add half and half; bring to a boil. Keep sauce bubbling gently, may need to reduce heat. Cook for 10 minutes or until liquid is reduced to a thick sauce consistency, stirring occasionally.
  2. In the meantime, cook the pasta or linguine. Boil 7 gallons of water in steam kettle, tilt skillet, or in a large pot on stovetop. Add pasta to boiling water and stir gently. Return to a boil as quickly as possible and cook pasta for 7 minutes, or until al dente. Drain cooked pasta and hold hot until sauce topping is added.
  3. Place remaining 1 cup canola oil in a large sauce pan and bring heat to high. Add spinach and cook until wilted and liquid evaporates. Adjust heat as needed. Add thickened mushroom and onion sauce, lemon juice and nutmeg; stir gently to coat spinach. Add dried cranberries; heat through. Serve over cooked linguine; each serving is 1 cup sauce over 1 cup cooked pasta.

 Each serving provides 2 oz. eq. whole grains, 1/4 cup  fruit, 1/8 cup dark green vegetable and 1/2 cup other vegetable.
