CRANBERRY AND SPINACH QUICHE

Ingredients:

DOUGH

1 ¾ cups flour, unbleached, all-purpose)

1 Stick unsalted butter

1 large egg

1 Tsp of crème fraîche (or sour cream)

1/2 Tsp of salt

QUICHE

INGREDIENTS

9" pie shell

2 Tbsp butter

1 Cup Ocean Spray®Craisins® Dried Cranberries

¼ Cooking onions, sliced

1 Cup sautéed spinach squeezed dry (6 cups raw)

½ Tsp salt

¼ Tsp nutmeg

¼ Tsp black pepper

¾ Cup grated Parmesan cheese

1 1/4 cup heavy cream

5 eggs, lightly beaten

Directions:

DOUGH

  1. Sift the flour over a large bowl and add the salt

  2. Cut butter into tiny cubes and mix into flour with fingertips. The dough should feel like coarse sand grains between fingers.

  3. Make a well in the middle of flour and butter mixture and break the egg into it

  4. Beat egg a little with a fork then use a wooden spoon to incorporate it into the flour little by little.

  5. Add the crème fraîche or sour cream and mix again until the dough is homogeneous (Alternatively, or if the dough is still dry, pour a few drops of water and knead.) Use your hands to knead the dough and form two balls of the same weight.

  6. Place the balls of dough in plastic wrap and let them rest in the fridge for at least 1 hour before using or freezing.

  7. Let the dough warm up a little before rolling it out. Roll out 1/4’’ onto 9’’ pie pan. Lay aluminum foil over the dough and lightly press so it appears the pie pan is lined with foil. Pour dry beans on top of the foil just enough to cover the surface. Bake at 350°F for 10 min. By taking this step you are doing two things; preventing the dough to rise when baked, and insuring the dough will be fully cooked when the egg mixture is added.

  8. Let shell cool with beans and foil on surface.

QUICHE DIRECTIONS

  1. Preheat oven to 375°F.

  2. Melt the butter in a saucepan and sauté onions until tender.

  3. In bowl combine Craisins®, spinach, onions, salt, pepper, nutmeg and ½ cup Parmesan cheese

  4. Beat cream and eggs together and combine with the spinach mixture. Pour into the pie shell, and sprinkle with remaining cheese

  5. Bake for 30 minutes.
