ORGANIC BIBB LETTUCE AND BABY ARUGULA WITH SMOKED DUCK

Ingredients:

1 - Organic Bibb Lettuce
6oz. - Baby Arugula
1 - Smoked Duck Breast
1/2 Cup - Craisins® Dried Cranberries
1/4 - Pine Nuts (Toasted)
8 - Cherry Tomatoes (Cut in Half )
SUGGESTED DRESSING
Orange Chipotle Vinaigrette
2 - Each Chipotle Chile (Canned in Adobe)
1 Cup - Extra Virgin Olive Oil
3 Tablespoons - Chopped Fresh Cilantro
1 - Garlic Clove (Minced)
1/2 Cup - Ocean Spray® 100% Orange Juice
1/4 Cup - Red Wine Vinegar
5 Tablespoons - Brown Sugar
Salt & Pepper to Taste
This vinaigrette can be served warm to enhance flavour

Directions:

  1. Peel off 4 leaves of the Bibb Lettuce & keep them whole. Rinse well under cold water

  2. Tear up the remainder of the Bibb Lettuce & toss together with the baby arugula, Craisins®, toasted pine nuts & tomato

  3. In a small mixing bowl, thoroughly whisk together the vinaigrette ingredients

  4. Slice the smoked duck breast very thin and divide into

4 equal portions
Place 1 leaf of Bibb Lettuce in the centre of the plate & add the mixed lettuce on top
Fan out the sliced duck and place on top of the mixed salad
Pour the vinaigrette over the salad and duck & serve immediately
