PORT WINE POACHED PEAR AND CRAISINS® FLAN WITH BRIE LATTICE

Ingredients:

4 - Pie Crust (4 Inch)
5 - Eggs
1/2 Cup - All-Purpose Flour
1/2 Cup - White Sugar
2 Teaspoons - Almond Extract
1/4 Cup - Melted Butter
1/2 Cup - Craisins® Dried Cranberries
16 - Strips of Brie (Slice in 4” Lengths)
2 - Pears (Peeled & Cored) Cut in Half
1 Cup - Port Wine
1 Cup - Red Wine
1/2 Cup - Brown Sugar
SERVING SUGGESTIONS
Place the flan in the centre of the plate and drizzle the reduced port wine glaze around the flan

Directions:

  1. Place the pears,port wine and red wine together in a sauce pot and on medium heat cook the pears for 3 minutes. Remove the pears and place them in the fridge

  2. Add the brown sugar to the liquid and reduce on high heat by half or until it becomes a “sticky” consistency remove from the heat and keep for later

  3. Pre-heat oven to 375°F
  4. In a large bowl combine eggs, flour, sugar, almond extract and melted butter. Pour into unbaked pie crust. Add 1/2 of the Craisins®. Slice the pears and arrange them in spokes radiating from the center

  5. Bake in pre-heated oven for 15 minutes at 350°F or until custard is firm. Remove from the oven and place 4 pieces of Brie on top of each flan in a criss-cross. Sprinkle the remaining Craisins® on top and place back in the oven for 2 minutes to melt the Brie
