This salad features the fruits of five farms with grilled marinated chicken breast, chopped Napa almonds, fresh crumbled goat cheese, cornbread croutons, Campari tomatoes and ripe avocado tossed in a delicious Ocean Spray® White Cranberry vinaigrette.
Ingredients:
4 cups Baby Spinach Leaves, rinsed
4 cups Red Lettuce Leaves, rinsed
2 Whole Campari Tomatoes, quartered
1 cup Ocean Spray® Cherry Flavored Dried Cranberries
½ cup Whole Roasted Almonds, chopped
4 oz Ocean Spray® White Cranberry Vinaigrette
1 cup Goat Cheese Crumbles
16 1x1” Cornbread Croutons
2 6oz Chicken Breasts, roasted and shredded
1 Whole Ripened Avocado, slivered
Directions:
Wash and clean lettuces. In a large bowl, combine all ingredients except for the last four items and toss with vinaigrette. Divide salad evenly amongst four plates. Top each salad with ¼ cup of goat cheese crumbles, 4 cornbread croutons, 3 oz of shredded chicken and ¼ of avocado. Season with fresh cracked pepper and serve immediately
