FRESH RACK OF LAMB WITH BELL PEPPER & CRAISINS® COULIS

So delicious!

Ingredients:

  • 1 - Fresh Lamb Rack (Frenched/Trimmed)
    2 Tablespoons - Dijon Mustard
    1 Tablespoon - Dry Red Wine
    1 Teaspoon - Freshly Ground Black Pepper
    1 - Garlic Clove (Minced)
    4 Tablespoons - Bread Crumbs

    Bell Pepper & Craisins® Coulis
    8oz. - Roasted Red Peppers (Jar)
    1/3 Cup - Craisins® Sweetened Dried Cranberries
    1 Tablespoon - Honey
    1 - Garlic Clove (Minced)
    1/2 Teaspoon - Sri Racha
    Salt & Pepper to Taste

Directions:

Mix together Dijon, red wine, pepper & garlic.

  • Coat rack of lamb completely with mixture and press it gently in the bread crumbs.

  • Broil in a 350° pre-heated oven for 20 - 25 minutes for medium.
  • Combine all of the ingredients for the coulis and puree together in a blender.

    Yield:
