SALMON WITH CRANBERRY SUPERBERRY VINAIGRETTE

Perfectly yummy!

Ingredients:

½ cup      Ocean Spray® Cran-BlueberryTM Fruit Drink

5 tbsp      Olive oil (keep 1tbsp sep.)

4 tbsp      White wine vinegar

1 tbsp      Honey

1 tsp        Salt

4 med      Salmon fillets

4 cups     Mixed salad

¼ cup     Ocean Spray® Craisins® Original Dried Cranberries

¼ cup         Blueberries

Directions:

  • Whisk together Ocean Spray® Cran-Blueberry, olive oil, vinegar, honey, and salt in small bowl, set aside.
  • Heat remaining tablespoon of olive oil in large non-stick pan over medium-high heat. Season salmon fillets with remaining 1/2 teaspoon salt. Cook for 6 to 8 minutes until golden on both sides and flakes easily with a fork.
  • Place salmon on greens and drizzle with vinaigrette. Mix salad with Craisins® Dried Cranberries and blueberries.
