Best holiday salad!

Ingredients:

• 2 handfuls of Mache

  8oz. - Fresh Baby Spinach

  1 Cup - Ocean Spray® Craisins® Dried Cranberries
  1/2 Cup - Red Onion (Thinly Sliced)
  1/2 Cup - Mandarin Oranges
  1/2 Cup - Candied Pecans
  SUGGESTED DRESSING
  White Cranberry & Truffle Vinaigrette
  3/4 Cup - Extra Virgin Olive Oil
  2oz. - Ocean Spray® White Cranberry Juice
  2 Tablespoons - Minced Shallots
  1 Teaspoon - Chopped Fresh Basil
  1 - Garlic Clove (Minced)
  1 Teaspoon - White Truffle Oil
  Salt & Pepper to Taste

Directions:

Toss the spinach, mache, red onion, mandarin oranges & half of the Craisins®

• Combine the dressing ingredients in a small mixing bowl by whisking together the olive oil, Ocean Spray® White Cranberry Juice, shallots, basil & garlic

• Pour Vinaigrette over salad and toss to coat. Top with the remaining Craisins® serve immediately
