SPINACH SALAD WITH WARM CRANBERRY MAPLE DRESSING

This harvest salad is spinach based with small diced roasted sweet potatoes, dollops of chevere, and sliced roasted turkey breast, fresh Ocean Spray® Cranberries all drizzled with a warm Ocean Spray®Cranberry Juice and maple dressing.

Ingredients:

  • Baby spinach                                        2 cups, packed

    Sweet potatoes, diced and roasted          ¼ cup, divided

    Fresh Ocean Spray® Cranberries          ¼ cup, divided

    Warm Cranberry Maple Dressing           2 tablespoons, divided  [recipe on site]

    Goat cheese                                          2 tablespoons

    Turkey breast, roasted and sliced           4 slices (3-4 oz)

Directions:

1.      In a small bowl reserve 1 tablespoon of sweet potatoes and Fresh Ocean Spray® Cranberries.

2.      In a medium bowl toss together the baby spinach, remaining sweet potatoes, and remaining Fresh Ocean Spray® Cranberries with 1 tablespoon of Warm Cranberry Maple Dressing.

3.      Place this mixture in a medium-large serving bowl.  Sprinkle the remaining sweet potatoes and Fresh Ocean Spray® Cranberries on top of the salad.

4.      Evenly divide the goat cheese into dollops on top of the salad. 

5.      Lay the turkey on top and drizzle the whole salad with remaining Warm Cranberry Maple Dressing.
