Cured ham, chopped salami, chopped romaine, chopped radicchio chopped Ocean Spray® Dried Cranberries, quinoa, fresh herbs, provolone cheese, cucumber and tomato tossed in an cranberry Italian vinaigrette.
Ingredients:
- ½ cup salami, diced
- ½ cup prosciutto, diced
- 1 cup romaine lettuce, chopped
- 1 cup radicchio, thinly sliced
- ¾ cup Ocean Spray® Dried Cranberries
- ½ cup quinoa, cooked
- 1/3 cup provolone, diced
- 1 cup cucumber, small dice
- 1 cup tomato, small dice
- 4 whole wheat wraps
Cranberry Italian Dressing:
- ½ cup Ocean Spray® Cranberry Juice
- ½ cup red wine vinegar
- 6 tablespoons honey
- ½ cup olive oil
Directions:
In a small bowl, whisk the cranberry juice, vinegar and honey together. Stream in the olive oil to create the vinaigrette, whisking constantly. Season with salt and pepper.
In a medium bowl, combine the salami, prosciutto, romaine, radicchio, Ocean Spray® Dried Cranberries, quinoa, provolone, cucumber and tomato. Stir in ¼ cup of the cranberry Italian vinaigrette.
Divide the chopped salad mix into 4 portions. Place inside 4 wheat wraps and roll to finish.
Serve immediately.
